The Fricandeaux is a tasty morsel wrapped in caul fat simply made from pork mince, potatoes, onion, salt and pepper. This is a traditional and regional French delight much like a potted terrine. Not to be shared, these are too delicious and should be kept a secret. Best eaten at room temperature with crusty bread, dijon mustard and other charcuterie. Fabulous in a sandwich too.
