Pancetta

This flat pancetta is our pork belly massaged with salt, peppercorns, garlic, thyme, coriander seeds, brown sugar, bay leaf and chilli before hanging to dry for up to three months. Superb to use in your cooking, especially on pizza or in pasta sauces.
