There’s nothing quite like a full roasted porchetta: rolled Berkshire loin and belly wrapped in salty, blistering crackling and filled with herbaceous, fragrant seasoning. Our 100% free-range Berkshire pork is raised on open regenerative pastures—completely antibiotic- and chemical-free—so the meat is naturally tender, juicy and full of rich flavour.

Each porchetta comes scored, seasoned and ready to cook, and is crafted from the classic combination of pork loin and belly for the perfect balance of lean meat and buttery fat. Seasoned with lemon zest, seasonal garden herbs, parsley, sea salt and pepper it’s a showstopper for entertaining.

Cooking Guide (from our kitchen to yours):

For incredible crackling and a succulent centre:

  • Salt the skin generously with good sea salt, massaging it into the scores.
  • Let it sit for 30 minutes to draw out moisture.
  • Roast at 230°C fan-forced (or flat out) for at least 40 minutes, until the crackle forms.
  • Reduce to 180°C and continue roasting for 30 minutes per 1kg of meat.
  • Rest for 30 minutes in the oven with the door ajar so the crackle stays crisp.

Don’t be afraid of a little pink juice in the centre—that’s the sign of a perfectly cooked porchetta. Overcooked pork is criminal!
