A spent hen is a laying hen that has finished her egg-laying period. Rather than letting her go unused, we process her for food: each bird is approx 1kg, with flavour that comes from a fully lived, free‐range life.

Best uses & cooking tips
These hens are ideal for slow and moist cooking methods: soups, bone stocks, stews, casseroles. Tenderness improves with time: a long simmer or pressure cooking works wonders. Because of their age, the meat is firmer than young broilers - expect more texture, richer flavour.
